I can answer some of those for you! I work in event planning, and coordinate about 20 or so weddings a year.
1.Coordinator fees for full service planning are generally 10% of your budget, but it does vary. Some charge by the hour (my hourly rate is $50, and i'm in a lower price range area), some by the day if you want just day of service (expect $500 and up). These are just guesstimates, I don't know anything about Austin, but general for where I live.
2. Decide what aspects of your culture are most important to you, and include some food and music from each. You don't have to try to get in every little thing. Keep it simple.
3. Ask your caterer about Vegan dishes that compliment your region, cultures, and the themes of your reception.
4. With music, keep in mind what your guest will enjoy. You want it everyone up and dancing. Let your MC or band know what your taste are, and that you would like a little of this and that. An experienced entertainer should know how to make it fun for everyone.

6. They can be more complicated to plan, and you will probably have far less guests. If you want a smaller, more intimate ceremony with just the closest of friends and family, it would probably be great for you.

8. Do the best that you can afford without stressing yourself out, or taking on debt. It's not worth it. Be sure to discuss it in detail with your family, fiance, and anyone who may be contributing.
