Normally, I'd say return it, and I know you tried, and in the future, still try to, but with this foundation, I wouldn't worry. I've noticed that it changes consistencies rather consistently with the temperature, actually. If I leave it in my bathroom for a while, which is warmer at this time of year, it has a thinner, more liquid-y texture, but if I leave it in my room, which is colder, it gets thicker, almost viscous. Nothing at all to worry about. It still applies the same way, and thins right down or thickens up upon application. The finished application looks exactly the same, the wear is the same, nothing at all to worry about. Hope this helped!
PS: Once it gets thick, it usually doesn't go back to being thin too easily. Just remember that you need less of it when it's thick, and it'll spread farther. Also, make sure it hasn't separated (ie. oil or a thin liquid is sitting at the top or dispersed throughout it), as this is definitely grounds for a return/ non-use. One final test: Give it a sniff. I know that this particular foundation has an odd smell already, but if it smells very off, you can usually be assured that something is wrong.
