Which means that I can hardly avoid them. My nose is always stuffy. But I get severe swelling of eyes and lips and my palette feels sore when I eat canned shellfish. I might be actually allergic to the chemical in the processing, since I don't swell up when I eat fresh ones.

I'm in the exact same boat. I'm allergic to anything with fur or feathers, and then also dust mites, and a bunch of other stuff. But I'm a serious believer that owning that which you are allergic to helps you build a tolerance.
My best friend got new kittens, and the first couple times I visited her I got itchy, watery eyes, sneezing, coughing, congestion, etc...now, nothing more than an itchy nose. She also gives them washcloth baths and vacuums regularly, so that helps a lot, too.
